Stir Fry Ginger Chicken & Kale on Brown Rice
Not a lot of science to this one. Rice in the rice cooker. I used a bit of rice vinegar (read: too much) but save for that, the kale was in a pot for about 5 minutes to boil. The supermarket here sells chicken stir fry so I don’t have to cut it up, just cook it and it makes my cooking life a bit easier. So I threw that in a wok with some spices (ginger, pepper, salt, a dab of sesame oil)...

1-1/4 cup almond flour 1 cup sugar 4 tsp cinnamon 1/4 cup butter, at room temperature 1 large egg 1 teaspoon vanilla 1/8 cup of chopped nuts (optional, I don’t like mine with nuts)

What is going on
For months, I had absolutely no problems with baking gluten-free things. All of a sudden over the past few weeks, I’ve been running into problems galore. I think the real problem is substitutions. You have so much less leeway with gluten free substituting if you don’t know what you’re doing (see also: me) and I think that inflexibility is driving me bonkers.
